Pimonpan Bentz (Maam), owner of Thai on the Fly, grew up in Bangkok, Thailand. The creations of Maam have originated from her experiences in her family’s restaurants with four generations of chefs. This brings a lot of tradition to her recipes, which have been passed down through the family for a thousand years. She said, “Thai people are proud to have eating and cooking as a very important part of our life. That is what has made Thai food world famous for its extraordinary blend of spices and unique balance of flavors.”
Most days you will find the Thai on the Fly cart in downtown Bend tucked behind Sportsvision on the corner of Bond and Oregon streets. On Saturday, you’ll find this mobile authentic Thai cuisine at our very own Farmers Market!
Maam says, “The NorthWest Crossing Farmers Market has been a wonderful experience for us. We started last year and are so happy to join again. Great music and a wonderful community feeling makes for the perfect venue for some flavorful Thai food. And we can do some shopping at some of the other great vendors at the same time.”
